Crème brûlée is one of THE classic desserts of French cuisine. Just the sound of cracking the first bite is enough to make your mouth water. Of course, this popular dessert with its delicious caramel crust is a must-have at Café Centrale as well.

Crème brûlée is a dessert made from egg yolks, cream, and sugar. It is flavored with vanilla, cinnamon, and orange and lemon zest. To prepare it, the egg yolks are whisked with sugar and cream and then heated. Next, vanilla and the other flavorings are stirred into the cream. It is then poured into small ramekins and baked in the oven or poached in a water bath.

Once the cream comes out of the oven or double boiler, the real highlight follows: the caramel crust! To make it, sprinkle a thin layer of sugar over the cream after it has cooled, and immediately caramelize it with a handheld blowtorch. This creates that signature crunch with the first spoonful—the kind that makes our mouths water.
