Crème Brûlée is one of THE dessert classics of French cuisine. Just the cracking of the first bite makes your mouth water. Of course, the popular dessert with a delicious caramel crust should not be missing at Café Centrale.

Crème Brûlée is a dessert made from egg yolk, cream, and sugar. It is refined with vanilla, cinnamon, and orange and lemon peels. To prepare it, the egg yolk is stirred with sugar and cream and then heated. Then the vanilla and other flavors are stirred into the cream. Afterwards, it is poured into a kind of small casserole dish and poached in the oven or a water bath.
After the cream comes out of the oven or water bath, the real highlight follows: the caramel crust! For this, after cooling, it is sprinkled with a thin layer of sugar and immediately caramelized with a hand-held gas burner. This creates the typical cracking with the first spoonful that makes our mouths water.
